here are few starters option to add to your Holi party menu:

Crispy Honey Lotus Steam

A nourishing and healthy, vitamin enriched dish, comprising shallow fried crispy Lotus stem flavoured with light soy, honey and a hint of chilli sauce.

Ingredients:

  • Honey
  • Sugar
  • Vinegar
  • Ginger
  • Spring Onion
  • Refined Oil
  • Corn Flour
  • Ketchup
  • Light Soya
  • Butter
  • Lotus Stem

Method:

  • Take the lotus stem, clean it thoroughly.
  • Cut the stem into several pieces in circular rounds, keeping the knife in an angled position for that perfect shape.
  • Fry the stems over a cooking pan using refined oil.
  • On a separate pan, melt a required cube of butter till turns golden; then add light soya, ginger, vinegar, sugar, honey and a bit of tomato ketchup for a subtle tang.
  • Toss the stems over the ingredient mixture, adding some corn Flour as per the required thickness in the texture.
  • Garnish with some chopped spring Onions for the ultimate flavour

PAN FRIED CHILI PANEER

Diced marinated paneer, sautéed with fresh vegetables, tossed in Oyster sauces; with the luxury base of red wine.

Ingredients:

  • One large Paneer cube diced into pieces.
  • Shredded Vegetables including Capsicums, Onion & Carrots
  • Broth Powder
  • Chilli Paste
  • Oyster Sauce
  • Red Wine
  • Sesame oil

Method:

  • Sautee the chopped celery & veggies, along with the diced paneer cubes in a frying pan.
  • Add some salt and broth powder, squeeze in some Chilli Paste, Oyster Sauce with few drops of red wine for the luxury aroma
  • Drop a few spoons of Sesame oil and do the final garnishing with spring Onions.

FRIED CHICKEN WINGS

Marinated chicken wings fried to crisp, flavoured with lemon and chilli oil for the extra crisp with every bite

Ingredients:

  • Total 4 pieces of fatless whole wings.
  • Ginger & Garlic
  • Coriander Leaf
  • Chilli Oil
  • Lemon Juice
  • Salt
  • Chilli Paste
  • Flour

Method:

  • Marinate 4 pieces of juicy, tender whole wings in ginger & garlic along with some sauces and few pinches of salt.
  • Dip them into a batter prepared, using Chilli oil, Chilli Paste, salt and flour.
  • Deep-Fry them one by one in Chilli oil for 5-7 minutes.
  • Drain out the excess oil and soak them over a tissue.
  • Squeeze on one drop of lemon juice for a spicy tang.

 

ROASTED CHILLI PORK

Marinated pork double fried and tossed in hoisin sauce, tomato sauce, chilli sauce and black bean sauce with a squeeze of lime.

Ingredients:

  • Onion, green capsicum, cabbage cut into diced pieces
  • Slice roasted pork 110 gm.
  • Chopped ginger, onion, celery.
  • Black bean
  • Chilli Paste
  • Tomato ketchup
  • Hoisin sauce
  • Dark soya sauce
  • Lemon juice
  • Wine
  • Salt , pepper, sugar

Method:

  • 1 Tea spoon oil with chopped ginger onion, celery sautéed for few seconds.
  • Add Onion, green capsicum, cabbage.
  • 1 tea spoon black bean sauce.
  • 2 tea spoon chilli paste, 1 tea spoon tomato ketchup. 1 tea spoon hoisin sauce.
  • Half tea spoon dark soya sauce, salt pepper, sugar as per taste
  • Finishing with lemon juice 1 tea spoon, wine half tea spoon.
  • Garnish with coriander leaf.
